⋆˚ Cookie recipes ˚⋆

It seems it is kind of christmas season and like every year i take some time to bake some cookies for my friends and family. I find they make much better gifts than scrambling to buy something online that the person might not enjoy. It helps being good at baking i guess... :humble:

In my opinion the most important quality of a cookie recipe is that they are easy to make, deosnt take forever to prep, can be frozen for later use and uses common household ingredients so i can spontaneously decide to make some sugary snacks when i forget to buy my late-night chocolate. These are my favourite cookie recipes. Both take about 1-2 hours tops and make delicious cookies.

Cinnamon Choco Chip Cookies

Makes roughly a dozen cookies, serves one (me). Idk where i got the recipe from
  • 150g of cold butter (110g of hot butter)
  • 160g of sugar
  • 1 pack of vanilla sugar
  • 1/2 tbsp of cinnamon
  • 1 egg and 1 egg yolk
  • 150g of flour
  • 1/2 tbsp of baking powder
  • a pinch of salt
  • an amount of chocolate chips
Instructions:
  • combine sugar, vanilla sugar and cinnamon in a bowl
  • heat 150g of butter until it's golden brown and toasted
  • add in 110g of the hot butter (accounting for evaporation) and mix thoroughly
  • let the mixture cool a bit until its only slightly warm to the touch (so the eggs dont cook too fast)
  • add in the eggs and whisk until the batter turns a lighter colour
  • mix in flour, baking powder and salt and roughly mix (try not to overmix or you will get tough cookies)
  • add in the choco chips and mix
  • chill in the fridge for 30 minutes
  • preheat oven at 180C
  • form dough into little tablespoon sized balls
  • cover in additional chocolate chips if you want and bake at 180C for 8 minutes. Make sure to leave them space because they will grow!!
  • after you take them out let them cool for 30-60 minutes, ideally transfering them to a wire rack after 10 minutes but who has a wire rack in this economy... They should still be soft for a bit so be careful when transfering

Christmas Sugar Cookies

Makes like 24 cookies. Inspired by this recipe
  • 280g of flour
  • 170g of unsalted butter
  • 150g of sugar
  • 1 pack of vanilla sugar
  • 1 large egg or two teeny weeny eggs
  • 1/2 tbsp of baking powder
  • a pinch of salt
  • 1 pack of vanilla sugar
  • optional freeze dried raspberries
  • icing (powdered sugar + milk until it's icingy idk i just buy ready-made icing lol)
  • sprinkles!!!!
Instructions:
  • combine flour, baking powder and salt in a bowl
  • beat room-temperature butter, vanilla sugar and sugar for about 3 minutes
  • add egg(s) and keep beating until combined
  • combine wet ingredients with dry ingredients and mix with a silicone spatula
  • throw in raspberries or any other add-ins if you have them
  • divide in half and fridge (the original recipe tells you to roll out the cookies before you put them in the fridge but who has that much space?!?!)
  • preheat your oven at 180C
  • now roll out your cookies and cut them into fun shapes (i only do circles because i dont have cookie cutters. I use a glass instead...circles are fun!!)
  • bake for ~10 minutes. Your bake time may highly vary based on your oven (mine only takes 5 minutes). I like soft cookies so i take them out when they are set but only very slightly browned.
  • let them cool!!
  • add icing to your cookies with the back of a spoon and decorate to your hearts content
  • let icing set for 1-2 hours, ideally overnight
